Ingredients:
Makes 12 cookies
115g solid coconut oil
250g cups light brown sugar, packed
2 teaspoons vanilla extract
60ml coconut milk
60g unsweetened applesauce
280g all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
300g of chocolate chips (use vegan chocolate chips if vegan)
This recipe is made vegan by using dairy free milk, like soy or oat milk, and vegan chocolate.
Step by step recipe
1. Preheat oven to 180º C Line a large baking sheet with parchment paper.
2. Whisk together the coconut oil, brown sugar, and vanilla, beating until well combined. Then add the coconut milk and applesauce and whisk everything until well combined.
3. In a separate bowl combine the flour, baking soda, and salt.
4. Add the dry ingredients into the wet mixture using a spatula unitl everything is well combined. The batter should be very thick so that you can easily form small balls.
5. Add the chocholate chips to the mixture.
6. Form small balls or just scoop tablespoon sized mounds of dough onto a lined baking tray. Make sure you leave enough space between the portions for the cookies to expand. Bake for 10 minutes. The edges should be golden and the center of the cookie will have set.
7. Finally, cool cookies on the baking sheet for about 10-15 minutes before moving them onto a cooling rack or a plate.
