Sunday mornings most delicious vegan pancake recipe to groove into a lazy day..

Ingredients:
Makes 10 Pancakes
240 ml unsweetened non dairy milk
2 tablespoons + 1 teaspoon oil of choice (I use coconut oil)
1 medium banana, peeled
200 g + 2 tablespoons all purpose flour
2 tablespoons of sugar (I only use one)
1 tablespoon baking powder
¼ teaspoon baking
½ teaspoon salt
1 teaspoon ground cinnamon
If you have a blender, you can just add all ingredients to it and save time. If you don't, just use a large bowl.
Step by step recipe
1. Add all of the ingredients to your blender. Tip: add liquid ingredients first, followed by the dry ingredients – this way it will blend much easier.
2. Blend the ingredients until all are well combined. Make sure not to over over blend (max 1min) as it may happen that your pancakes won’t rise as nicely later on.
3. Leave the batter to rest for at least 10 minutes. Ist normal that the batter is thick.
4. Preheat your pan on medium heat. With a good non-stick pan I wouldn’t use grease, if you want to (or don’t have a non-stick) I recommend to lightly grease with coconut oil or vegan butter. Pour the batter with a full small ladle per pancake. The pancakes are ready to be flipped once bubbles appear all over the top and begin to pop.
5. Allow to cook for another 2 to 3 minutes until golden then remove from the pan and serve immediately
