Salmon with wasabi mash and mushrooms

Serve a tasty, fancy looking dinner in just over 30 minutes!

Ingredients:

This recipe serves 4


For the salmon:

200-250 g salmon per person

Lemon

Olive oil

Salt and pepper

For the mushrooms:


400 g fresh mushrooms

1 tablespoon butter

Parsley

Salt and pepper

For the mash:

Serves 4

5 large potatoes

Butter

2-3 tablespoons of milk

Wasabi paste

Salt

Step by step recipe:

1. Preheat the oven to 200°C. Marinate the salmon in lemon, olive oil, salt and pepper for about 10minutes while the oven reaches the right temperature.

2. Peel the potatoes, cut in half and boil in salted water for about 15 minutes or until soft enough to mash.

3. Cook the salmon in the oven for 15-20 minutes depending on the size and thickness of your portions.

4. Clean the mushrooms and slice into quarters. Sautee in butter for about 10 minutes, season with salt and pepper and garnish with parsley.

5. Drain potatoes and mash them up, add some butter and milk. Finally mix in fresh wasabi paste (as much as you like, try and see how you like it).
