Raw Veggie Salad

This raw veggie chopped Salad is perfect for summer parties, or as a fresh side to potlucks and BBQs. It is super healthy and full of flavour.

Total time: 20 mins


Ingredients

This recipe serves 2-4

Salad:


200g Rucola

½ Broccoli

½ Fennel

½ Cucumber

1 Avocado

½ Grapefruit

Dressing:


Grainy mustard

Olive oil

Lemon

Ginger

Salt

Pepper

1. Wash all of your ingredients. Cut the broccoli into small pieces. Slice the fennel and cucumber into thin slices.


2. Assembly the salad and top with avocado and cubed grapefruit.


3. Add any nuts or feta cheese if you are not vegan.


Raw broccoli shares cancer fighting and immune boosting properties and is packed with soluble fiber that draws cholesterol out of your body.
