Lemon and garlic scallops

Ingredients:

Scallops

Olive Oil

Butter

Salt & Pepper


For the sauce:


Olive Oil

Butter

Garlic

White Wine

Lemon Juice

Salt & Pepper

Step by step recipe

1. Cook the scallops in some olive oil in a large pan on high heat. Make sure they are not touching. Season with salt and pepper and then add the butter. Cook for another 2 to 3 minute on the other side. Set aside and make the sauce.


2. In a separate pan, heat heat the butter and olive oil and cook until the butter has melted. Add the garlic and saute for 20 to 30 seconds until it becomes aromatic.


3. Add the white wine and lemon juice and season with salt and pepper. Cook the sauce for about a minute and turn off the heat. Add the scallops back to the skillet, including all the juices.


Serve with wasabi mash - just make your favourite mashed potatoes, add some butter, milk and as much wasabi as you like.
