Kale Salad

Beautiful fresh kale salad with sweet potato, quinoa and sun-dried tomatoes, and topped with crushed hazelnuts...

Ingredients

This recipe serves 2-3


Salad:


250 g fresh kale

1 large sweet potato

Sun-dried tomatoes

200g quinoa

Crushed hazelnuts

Dressing:


Ginger

Lemon

Olive oil

Salt

Pepper


Step by step recipe

1. Heat the oven to 200ºC top bottom heat.


2. Peel your sweet potato and cut into slices. Coat with olive oil, salt and pepper and cook in the oven for approx. 20 minutes.


3. Cook quinoa in a pot of water with a pinch of salt for 10-15 minutes.


4. In the meantime, wash the kale and slice the tomatoes into small pieces.


5. Mix kale and tomatoes with the quinoa and roasted sweet potato and top it with crushed hazelnuts.
