Hummus Party

Lemon hummus, beetroot hummus and homemade yoghurt flatbread...Snack away or combine with a fresh salad for a perfect healthy lunch!

Lemon Hummus

Serves 8 as part of a sharing platter

Ingredients:

2 x 400g can chickpeas, drained

1 garlic clove, crushed

5 tablespoons extra virgin olive oil

2 tablespoons of Tahini

2 lemons, zest and juice only

a good pinch ground cumin

plenty of ground black pepper and salt

Step by step recipe


1. Place all the ingredients in a food processor with two tablespoons of hot water and blend until smooth.


2. Season with paprika and olive oil, and serve chilled.

Beetroot Hummus

Serves 4 as part of a sharing platter

Ingredients:


1 small roasted beet or ¾ cups cubed beets 400g canned chickpeas, drained

1 garlic clove, crushed

5 tablespoons extra virgin olive oil

2 tablespoons of Tahini (sesame paste)

2 lemons, zest and juice only

black pepper and salt

Step by step recipe

1. Place all the ingredients in a food processor with two tablespoons of hot water and blend until smooth.


2. Season with yoghurt and olive oil, snack with fresh lettuce or chicoree leaves.



Yoghurt flatbread

Makes 4


Ingredients:


200g Flour

1 teaspoon baking powder

200g of Greek yoghurt or 150ml warm water (vegan option)

Step by step recipe


1. Mix all the ingredients in your food processor and pulse until the mixture forms a ball. If you don’t have a food processor, this can easily be done in a bowl using a fork to begin with, followed by your hands.


2. Put the dough into a bowl and cover with a damp cloth. Let it rise a little for 10–15 minutes. It won’t rise like normal dough, just puff up a little.


3. Dust a clean surface with flour. Divide the dough into four equal pieces and flatten them using a rolling pin. They should each be 2–3mm thick.


4. Warm up a frying pan and cook each flatbread for 1–2 minutes on each side, until nicely puffed up.
