Courgette cake

This super yummy, moist zucchini cake will definitely surprise you.. try this recipe and change things up - we've all made banana bread 100 times during the first lockdown!

Prep. time: 10 mins

Baking time: 60 mins

Total time: 70 mins

Ingredients:


300 g grated courgette

100 g melted butter or margarine

200 g brown sugar

130 g ground Haselnuts

220 g flour

2 eggs

1 pack of baking powder (20g)

1 teaspoon of cinnamon


Step by step recipe

1. Preheat the oven to 180°C and grease a medium sized box mould.


2. Mix all ingredients in a large bowl with a hand mixer. The dough is quite liquid even without additional liquid like milk because of the grated courgettes.


3. Pour the dough into the prepared box form and bake the cake for about 50-60 minutes.
