These homemade vegan rolls are filled with cinnamon and sweet glazed nuts and topped with delicious coconut frosting. Here’s how to make them.

Ingredients
This recipe makes 10 cinnamon rolls
For the dough:
25 g of fresh yeast or 1 pack of dry yeast
250ml warm milk (soy or oatmilk)
75 g coconut sugar (or packed brown sugar)
75 g coconut oil
500 g flour
1 tablepsoon cinnamon
¼ teaspoon cardamom
1 teaspoon salt
For the cinnamon filling:
1 tablespoon coconut sugar (or brow/muscovado sugar)
2 tablespoons coconut syrup (or more sugar)
2 teaspoons cinnamon
50 g of vegan butter
60 g walnuts or hazelnuts (optional)
50g raisons (optional)
Coconut frosting:
1 tablespoon coconut syrup
1 tablespoon coconut oil
50 g powdered sugar
2-3 teaspoons of non dairy milk
Step by step recipe
1. Crumble the yeast and dissolve with 1 tablespoon of sugar in the warm milk (approx. 35ºC).
2. Melt the coconut oil and add to the milk mixture. Stir in sugar, cinnamon, cardamom and salt. Then add the flour and knead the dough for about 10 minutes by hand or with a food processor. It should be soft and elastic. Place it in a large bowl, cover it with a damp kitchen towel and leave it to rise in a warm place for 40 minutes.
3. In the meantime melt the vegan butter at low heat. Add the coconut sugar, coconut syrup, cinnamon and cardamom, and mix into a syrupy, thick mass. Stir in chopped nuts and raisins as desired.
4. As soon as the dough volume has doubled, roll it out on a well floured work surface, into a large rectangle (about 1 cm thick).
5. Spread the filling evenly on the dough.
6. Carefully roll up the dough starting from the long side and cut it into pieces of equal size (approx. 3.5 cm wide).Tip: use a thread to easily cut the dough. Place it under the dough, rap it around the top and pull tightly in opposite directions.
You can prepare your cinnamon rolls the day before and let them rise overnight in the fridge so that you can easily serve them warm whenever you are ready the next day!
7. Place rolls in a greased or baking paper-lined baking tin, leaving enough space between the individual cinnamon buns, as they will rise. Cover and leave to rest again for about 30 minutes.
8. Preheat the oven to 180ºC top and bottom heat.
9. Optionally spread some melted vegan butter on the cinnamon buns and bake for 20-25 minutes.
10. For the frosting, stir all ingredients together and mix to a smooth, creamy sauce. If necessary, add a little more milk to dilute.
11. Allow the cinnamon rolls to cool slightly after baking and serve with the glaze while they are still warm.
