Simple cooking methods like boiling or steaming artichokes, soften the protective outer leaves and the artichoke heart. I recommend serving this as a starter with my favourite french vinaigrette. Its super tasty and fun as its a hands-on experience to eat them.

Ingredients:
1 artichoke per person
For the vinaigrette:
1 red onion, sliced into small cubes
1 apple, sliced into small cubes
1 teaspoon of mustard (optional)
Olive oil
Balsamico
Lemon juice
Salt and pepper
Artichokes are loaded with nutritional benefits such as fiber, vitamin C, vitamin K, folate, calcium, iron, and potassium!
Step by step recipe
1. Prepare the artichoke (I leave it whole but you can also slice off the crown) and bring a large pot of salted water to a boil.
2. Add artichokes and reduce the heat to a simmer. Cover the pot.
3. Depending on the size, cook time is between 20 to 35 minutes.
4. You can also test to see if they are ready by carefully transferring the boiled artichoke to a plate then tugging on one of the large outer leaves. If it’s easy to pull off the base, it’s ready.
5. Drain and cool slightly before serving.
